We had a bounty crop of eggplant, and lots of “I don’t like eggplant.” Hmmmm…”How ’bout eggplant fries?” Results:
“Delicious.” “Wow, these are stellar; better than regular fries.” “Can I take home the leftovers?” “I guess I DO like eggplant, may I have the recipe?”

Just made these cuz I had extra eggplant from the farmer’s market. Delicious… I ate them with some homemade marinara sauce. I used eggbeaters.

Has anyone tried the recipe for eggplant fries from bonappetit this past month form the restaurant in Chicago? They are fried, but their technique of soaking them in water first and then using rice flour sounded interesting.

I made these tonight.. and WOW! So good! My cousin owns a restaurant that gets rave reviews on their eggplant fries. I love this healthy option!!
